This site is an editorial resource on how one fruit flavour is kept the same in two formats: how a flavour profile is built in layers, how acid and sweetness are balanced, how a pressed piece and a soft chew are each made, how the pair is tasted against a reference, and how storage and packaging hold the match until the date on the pack.
"Same flavour, available in two formats" is one of the easiest lines to print on a pack and one of the hardest to deliver. A dry pressed piece and a moist set chew share almost nothing in how they are made, how they release flavour or how they age. Making them taste alike takes a reference standard, a trained panel, a stability programme and recipes built separately toward the same target. From the outside, a line that does this and a line that does not look identical on day one. The difference shows a few weeks later.
So the site is written as a reference. The position behind it is a plain one: a match is a result you test for, not an ingredient you add. A promise on the front of a pack cannot be checked by anybody. A retained reference sample, a page of panel scores and a batch record can be.
Everything here is descriptive: the top, middle and base notes of a fruit profile; why each fruit leans on a particular acid; how sweetness and acid are split between the inside and the outside of a chew; the settings recorded on a pressed run; the cook, deposit, rest and finish stages of a soft chew; water activity; reference standards, trained panels and the odd-one-out test; colour matching on a lightbox; stability programmes; and packaging chosen for how each format ages.
We publish no claims of any kind about any product, material or substance. We describe, recommend, compare and evaluate nothing that is sold anywhere, we give no usage guidance of any sort, and nothing here is professional advice. Descriptions of practice are general. The requirements that apply to any real product come from the law of the place it is sold, not from this page.
The resource is intended for adult readers aged 21 and over.
If something here is wrong, out of date, or reads as more certain than the evidence supports, tell us and we will correct it. Rules change and common practice moves, and a reference that is not maintained stops being a reference.
